zucchini & squash noodles

Great and  sunny weather but a lazy body. The aftermath of 6 consecutive days of hyperactivity sets in. Sluggishly dragging my feet to the kitchen, I decide against any time consuming lunch that requires more than the dish washer can handle. Rummaging through the fridge, I find my store bought pre-packed zucchini and squash noddles. I know I am paying a premium for the plastic but hey, an extra $2 for less cleaning.  I am environmentally friendly but not today.  Whoohoooo!!! My lazy day gets even more lazy. Sweet! Good thing is I have experimented on and perfected this dish over time according to my taste. Feel free to try out different versions. EPIC fail

It is a bright and beautiful Saturday! Body caffeinated, no thesis writing, floor cleaned (thanks to robots), laundry done and morning exercise dusted. Hyperactivity sets in! I have all this time with nothing to do. What mixing challenge should I attempt today? #deepthoughts ahn ahn!!!! moment of clarity... BAKEEEEEEE!!!!! I am not a fan of baking. However, this experience has shown me it needs precision, skills and more super powers than I realized. Although I have not raised the flag yet, I may be visiting vendors in the nearest future. Pastry of the day = meat-pie / beef patties. I could have purchased a pie crust from the store but where is the challenge if everything is not made from scratch? Gets out minced meat, scallions, eggs, carrots, all purpose flour, baking powder, spices, butter, sweet peat and potatoes. Thanks to YouTube, I found similar recipes. Quinoa, the quick and perfect grain

I have not masticated anything today and I feel okay. However, the rumbles in my stomach say otherwise and push me to the kitchen.  #shrugs. What do I mix up today in less than 30 minutes? POOOFFF!!!!! A moment of clarity has been reached. QUINOA to the rescue.  A quarter cup of quinoa cooked in broth with some veggies will be the way to go. All macros and micros are taken care off with zero sweat and few dishes to clean. This definitely makes me happy. Dancing into the kitchen with some Abba playing at the background. Below are two of the many quinoa dishes I have made. Ingredients Quinoa Chicken broth Spices (whatever your taste buds crave) Scallions Butter (optional) Protein of choice Veggies of choice All purpose flour Egg or milk Seasoned bread crumbs Olive oil Onion Cloves of garlic Cooking spray Method Quinoa Bring water or broth to boil. Versatility of cauliflower rice

My inspiration comes from spending almost all day indoors due to COVID-19. For unknown reasons, the more time I spend indoors, the more I crave snacks. YIKES! How do I maintain a healthy diet under 2000 kCal without snacking on celery sticks (#yuck) and baby carrots? Holy cow! I had a full bar of Ritter Sport milk chocolate hazelnut this morning, which is a third of my daily calorie intake and also empty calories. I can't starve, no way. My mouth and intestines need some form of exercise. #sighs. Lunch has to pay the price. I switched my plan from basmati rice to cauliflower rice. Grocery store, here I come. I paid a premium for packaged cauliflower rice since I had no idea how to use the food processor sitting on my counter top. Thanks to YouTube videos, I will be making mine from now. About me & this blog

This blog was created as a result of 1.5 hours commute time saved during the COVID-19 pandemic. Prior to the world shutting down, I was excited to bag my PhD in 6 months (let's see if I can still achieve that!). I have always been an active person filling every second of my time with activities such as - researching, exploring, going on adventures, definitely CLEANING and working out. I would do anything to avoid cooking as it was was not my jamz (it still isn't). 1 hour at the grocery store picking fresh veggies, 1 hour cleaning and chopping them, 1 hour cooking, 10 minutes eating and 30 minutes cleaning the dishes (aarrrggghhhhh!!!!!), definitely does not fit into my schedule. Being forced to stay at home for about 3 months led to the redirection of my hyperactivity into endless hours of mixing things up in the kitchen in the name of cooking. I try to be a healthy eater without excluding any class of food because I believe in a healthy, balanced diet as opposed to explo...
