This blog was created as a result of 1.5 hours commute time saved during the COVID-19 pandemic. Prior to the world shutting down, I was excited to bag my PhD in 6 months (let's see if I can still achieve that!). I have always been an active person filling every second of my time with activities such as - researching, exploring, going on adventures, definitely CLEANING and working out. I would do anything to avoid cooking as it was was not my jamz (it still isn't). 1 hour at the grocery store picking fresh veggies, 1 hour cleaning and chopping them, 1 hour cooking, 10 minutes eating and 30 minutes cleaning the dishes (aarrrggghhhhh!!!!!), definitely does not fit into my schedule. Being forced to stay at home for about 3 months led to the redirection of my hyperactivity into endless hours of mixing things up in the kitchen in the name of cooking.
I try to be a healthy eater without excluding any class of food because I believe in a healthy, balanced diet as opposed to exploding fad diets. I maintain a daily calorie intake not exceeding 2000 kCal. If for any reason I exceed that limit, then the next day will be a painful one to make up for it.
The question was - how do I keep a tight schedule and not be bored with the same meals everyday (as a student, these were not problems)? BOOOYAAAA!!!! The epiphany came after 2 weeks of going crazy doing nothing other than writing my thesis and publication. COOK!
Thanks to a huge push from my sister (Ife), I have shared some of my successes and failures as an amateur cook. Good thing is there is an extra mouth to eat and judge my product irrespective of the outcome.
