Quinoa, the quick and perfect grain

I have not masticated anything today and I feel okay. However, the rumbles in my stomach say otherwise and push me to the kitchen. 

#shrugs. What do I mix up today in less than 30 minutes? POOOFFF!!!!! A moment of clarity has been reached. QUINOA to the rescue. 

A quarter cup of quinoa cooked in broth with some veggies will be the way to go. All macros and micros are taken care off with zero sweat and few dishes to clean. This definitely makes me happy.

Below are two of the many quinoa dishes I have made.

Ingredients
Quinoa
Chicken broth
Spices (whatever your taste buds crave)
Scallions
Butter (optional)
Protein of choice
Veggies of choice
All purpose flour
Egg or milk
Seasoned bread crumbs
Olive oil
Onion
Cloves of garlic
Cooking spray


Method
Quinoa
Bring water or broth to boil. Add the quinoa and let boil for 5 minutes. Reduce heat, add butter, scallions or mixed veggies and let simmer till quinoa is translucent and soft. 

Note: Directions usually come with the brand of quinoa purchased. I just switch the water to broth and add my garnishes. Cooking is all about mixing things your tastes bud likes (maybe i should add chocolate someday).

Bread crusted chicken
First, roll seasoned chicken breasts in all purpose flour. Then roll flour coated breasts in whisked egg or milk (i have used both). Roll this in bread crumbs and set aside.
Sear the bread crumbs coated chicken breasts in the hot olive oil using a skillet (searing of both sides takes about 5 minutes each). Place the skillet in an oven preheated to 350 degrees Fahrenheit and bake at this temperature for about 10 minutes.

Shrimps
Thoroughly clean shrimps and season as desired. Bake the seasoned shrimps at 350 degrees Fahrenheit for about 7 minutes.

Asparagus and bell pepper mix

Break of asparagus stem and remove seeds in the bell pepper. Wash, cut, and season the vegetables as desired. Heat some olive oil in a skillet. Saute diced onions and minced garlic till translucent and fragrant. Add the seasoned vegetables and stir intermittently for about 10 minutes. Finish off in the oven till asparagus is soft but not dried out (usually about 5 minutes).

Green beans
Wash fresh green beans and cut off the edges. Season as desired, coat with cooking spray (or a drizzle of olive oil) and bake at 350 degrees Fahrenheit till soft (takes about 20 minutes).
