Taco Tuesday

From experience, I know that a healthy lifestyle and dieting should not be boring. One way to infuse vegetables into a finger-licking meal is by making tacos.

Arrrgghhhhhhhh.... I have to make two of each because my judge is lactose sensitive and I like my real cheese.
Looking at the time, 1 hour should be enough.

Ingredients
Taco shells (soft or hard)
Cole slaw mix
Shrimps
Chicken (left overs will cut your time by half)
Bbq sauce
Cheese (cheese alternative)
Bell peppers
Avocado oil mayonnaise (any mayonnaise will suffice)
Spicy shredded peppers (or sriracha)
Guacamole (optional. My calorie intake dictates the inclusion of guac)
Method
Clean, marinate and bake shrimp at 350 degrees till cooked (usually about 6 minutes). Dice the cooked shrimp and set aside. Marinate, cook or grill chicken as you like. Shred the cooked chicken and simmer in bbq sauce-sriracha mix till it is reduced and set aside.

Hard taco shells
In a clean bowl, add cole slaw mix, cheese, bell peppers, mayonnaise, bbq chicken and some spicy shredded bell peppers. Mix all together and set aside. In another clean bowl, add the same ingredients without the spicy shredded bell peppers. Add the diced shrimp and mix. 
Fill the hard taco shells with the fillings and place in a baking lined with aluminum foil.sprinkle come extra cheese on the tacos and bake at 350 degrees for about 7 minutes (taco shell manufacturer suggested duration for the shells) or till cheese melts.

Soft taco shells
In a clean bowl, mix some lettuce, cole slaw, cheese, mayonnaise, bell peppers and diced shrimp. Set aside. In another clean bowl, mix some lettuce, cole slaw, spicy mixed peppers, bell peppers, cheese, guacamole and shredded bbq chicken. Set aside.
Place the soft taco shells on a taco rack and add the fillings. Sprinkle some extra cheese over the tacos, place the taco rack in the oven and bake at 350 degrees for about 7 minutes.

Flavored sparkling water is the cherry on top of this meal. And YES, it is store bought (I can see my soda stream giving me a type of look that I am choosing to ignore).

This tasty meal curbs my dislike for cleaning dishes, so, I will not be ranting today.
