Versatility of cauliflower rice
My inspiration comes from spending almost all day indoors due to COVID-19. For unknown reasons, the more time I spend indoors, the more I crave snacks. YIKES! How do I maintain a healthy diet under 2000 kCal without snacking on celery sticks (#yuck) and baby carrots? Holy cow! I had a full bar of Ritter Sport milk chocolate hazelnut this morning, which is a third of my daily calorie intake and also empty calories. I can't starve, no way. My mouth and intestines need some form of exercise.
#sighs. Lunch has to pay the price.
I switched my plan from basmati rice to cauliflower rice. Grocery store, here I come. I paid a premium for packaged cauliflower rice since I had no idea how to use the food processor sitting on my counter top. Thanks to YouTube videos, I will be making mine from now.
Below is a recipe for cauliflower rice, and then some pictures using it in different meals. Hope you try it out and let me know your thoughts below!
Ingredients
Cauliflower rice
Scallions
Mixed veggies
Carrots
Protein of interest (i feel like a scientist writing this phrase)
Mix of spices to your taste buds
Olive oil
Method
Saute scallions and diced carrots in olive oil for about 3 minutes.
Add the cauliflower and mixed veggies and keep sauteing till cauliflower starts browning.
Add in your spices, mix and keep on low heat till you like the feel in your mouth.
Note: Adding water makes it mushy which i don't like. If you want the feel of rice, no water or broth.
Serve with your favorite protein and maybe a side of kale veggie, asparagus, beet puree, steamed spinach or whatever rocks your boat.
