Bulgur is the tasty fiber
I have tried differ ways to increase my daily fiber intake. Oats, metamucil, wheat in the form of bread, pasta, cereal and snacks, vegetables and supplements. This was aimed at improving both my digestive system and metabolism while reducing my intake of processed carbohydrates. Still, I did not find that perfect tasting fiber meal. I complained about this to a friend of mine (shout out to Bomzybee) who suggested bulgur. Yes, she had to spell it out because I had never heard of it. Thanks to google and the nutritional experts, I found this to be high in both fiber and protein. JACKPOT!!!!!
I love the taste and it is gradually replacing the processed carbohydrates in my pantry. Bulgur is wicked easy to make and goes with anything. Infact, you can substitute rice in any recipe for bulgur. So far, I have made bulgur in two different ways and I have not been disappointed.
Ingredients
Bulgur
Carrots, green beans, peas and sweet corn (or mixed vegetables)
Chicken or beef broth
Scallions
seasonings
Side dish ( Steamed Kale, oven baked asparagus or green beans)
Protein of choice
Method
First boil some bulgur in hot water for about 5 minutes, strain and set aside. Although this is optional, I do it to extract some starch from the bulgur. Heat some Olive oil in a pan and saute the scallions, carrots, green beans, peas and sweet corn. This can be replaced with bagged and frozen mixed vegetables. Remove the vegetables and stir fry the bulgur in the left over oil as this will give it some color and fragrance. After stir frying for about 5 minutes, add some broth and seasonings, cover and let simmer on a low heat till it is well cooked. Add in the sauted mixed vegetables, stir and allow to cook for an additional 3 minutes or till dry.
Another method is to first extract some starch from the bulgur as previously described (optional) and simmer the bulgur in a mix of marinara sauce, seasonings (include bay leaves) and some broth.
It is a flavorful meal and don't forget to make it yours. My next try will be switching from coconut rice to coconut bulgur.
