Eggplant lasagna
Two things you can tell from reading my blog are that I love pasta and I keep looking for alternatives. So, I decided to try a low-calorie alternative in the form of eggplant lasagna. Thank God I did a thorough research on this if not, I would have ended up with eggplant soup.

Ingredients
Eggplant
Ragu sauce (or whatever sauce you like)
Shredded cheese (or alternative if dairy sensitive)
Minced meat sauce
Method
Wash and cut off the longitudinal ends of the eggplant. Thinly and evenly slice the eggplant along the longitudinal side so that it cooks evenly. Dehydrate the eggplant by baking in the oven at 350 degrees for about 10 minutes. You can also use salt or a skillet on the stove to dehydrate the eggplant.
Build your lasagna
First spread some ragu in a casserole dish. Add an even layer of the dehydrated eggplant. Spread some minced meat sauce, followed by some cheese. Add another layer of dehydrated egg plant and follow the process till you are out of eggplant. Make sure the top of the lasagna ends with shredded cheese. Bake at 350 degrees for about 40 minutes. Allow to cool and serve.
I found the eggplant version of a lasagna to be a little fibrous, chewy and hard to cut through. Perhaps, my eggplant slices were not thin enough. A second attempt at this recipe will definitely be made in the nearest future.

Apart from pre-packed salad, this is probably one of the few recipes that requires less than 5 dishes- knife, chopping board, casserole pan, baking tray and a spoon.
Oh! never mind. I forgot my minced meat sauce was pre-made. Lol
